What Is Calcium Propionate?

A calcium salt of propionic acid used as a preservative in bread and baked goods to inhibit mold and bacterial growth. It is one of the most widely used bread preservatives in the world. Propionic acid occurs naturally in Swiss cheese (produced by Propionibacterium).

Mechanism of Action

Propionic acid inhibits mold growth by disrupting enzyme function and substrate transport across microbial cell membranes. In the body, propionate is metabolized as a normal short-chain fatty acid.
