What Is Sodium Benzoate?

A synthetic preservative used to inhibit growth of mold, yeast, and bacteria in acidic foods and beverages. It is the sodium salt of benzoic acid, which also occurs naturally in cranberries, prunes, and cinnamon.

Mechanism of Action

In acidic conditions, sodium benzoate converts to benzoic acid, which penetrates microbial cell membranes and inhibits enzymes in the citric acid cycle. A key concern is that in the presence of ascorbic acid (vitamin C) and heat/light, sodium benzoate can form benzene, a known human carcinogen (IARC Group 1).
