While citric acid occurs naturally in citrus fruits, over 99% of manufactured citric acid (MCA) is produced by fermenting sugars using the black mold Aspergillus niger. Used as a preservative, pH adjuster, flavoring agent, and chelating agent in foods, beverages, pharmaceuticals, and cleaning products.

Mechanism of Action

Natural citric acid is a key intermediate in the Krebs cycle (citric acid cycle) and is metabolized normally. However, manufactured citric acid may contain trace residues from the Aspergillus niger fermentation process.
