What Is Potassium Bromate?

An oxidizing agent used in flour to strengthen dough and allow higher rising. When used correctly, it converts to potassium bromide (harmless) during baking, but residual bromate may remain if baking conditions are insufficient.

Potassium bromate is a strong oxidizer that causes oxidative damage to DNA. IARC classified it as a Group 2B carcinogen (possibly carcinogenic to humans) based on sufficient evidence in animals showing renal cell tumors, mesotheliomas, and thyroid follicular tumors.
