The most widely used food coloring in the world by weight. It gives colas, soy sauce, bread, and other foods a brown color. There are four classes (I-IV); Class III and IV are manufactured using ammonia and can produce 4-methylimidazole (4-MEI), a chemical classified as possibly carcinogenic by IARC.
Class III and IV caramel colors contain 4-MEI as a byproduct. 4-MEI caused lung tumors in mice at high doses in NTP studies. The concern is cumulative exposure from multiple sources (cola, soy sauce, bread, beer) rather than any single food.
