What Is Calcium Peroxide?

An inorganic compound used as a flour treatment agent and dough conditioner. When mixed with water, calcium peroxide releases hydrogen peroxide and calcium hydroxide. Mechanism of Action

Calcium peroxide slowly decomposes in the presence of moisture to release hydrogen peroxide (H2O2) and calcium hydroxide (Ca(OH)2). The H2O2 oxidizes sulfhydryl (-SH) groups in gluten proteins, forming disulfide bonds that strengthen the gluten network. This results in improved dough handling, better crumb structure, and whiter bread. The bleaching effect comes from the oxidation of carotenoid pigments in flour.
