A synthetic triarylmethane dye that produces a sea-green color. It is the only green dye certified by the FDA for use in food, drugs, and cosmetics. Green 3 is relatively rare in foods compared to other synthetic dyes — most green-colored foods achieve their color by mixing Blue 1 with Yellow 5 instead. It is also used in biological research as a protein stain.
Green 3 absorbs light in the red spectrum (625 nm), producing a green appearance. It is a triarylmethane dye structurally related to Blue 1. Poorly absorbed from the GI tract — approximately 95% is excreted unchanged in feces. Early animal studies reported tumors at the injection site (sarcomas) when Green 3 was administered subcutaneously, but oral studies showed no carcinogenic effects. EFSA noted limited available toxicological data.
